  1. Kill the lobsters by inserting a knife into their heads. Cut the lobsters into pieces and crack the claws.
  2. Mix the soy sauce, Chinese cooking wine, and cornstarch in a bowl to make the sauce.
  3. Heat the vegetable oil in a wok or large frying pan over high heat.
  4. Add the ginger and scallions and stir-fry for a minute until fragrant.
  5. Add the lobster pieces and stir-fry for about 5 minutes until they turn red.
