Beef Ribs with Sticky Pomegranate Glaze

Let's Get Started

  1. Preheat the oven to 300°F. Season the ribs with salt and pepper.
  2. Heat the olive oil in a large oven-safe pot over medium heat. Add the ribs and brown on all sides. Remove the ribs and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the pomegranate juice, brown sugar, and soy sauce. Bring to a simmer.
  5. Return the ribs to the pot, cover, and transfer to the oven. Cook for 2.5 hours, or until the ribs are tender.
  6. Remove the ribs from the pot and set aside. Skim off any fat from the surface of the sauce.
  7. In a small bowl, mix the cornstarch with a little water to make a slurry. Stir the slurry into the sauce and bring to a simmer. Cook until the sauce has thickened.
  8. Brush the ribs with the glaze and serve.
