Beef Ribs with Sticky Pomegranate Glaze
These beef ribs are slow-cooked to perfection and finished with a sticky, sweet, and tangy pomegranate glaze.
Ingredients - Serves 4
- Cornstarch - 1 tablespoon
- Soy sauce - 1/4 cup
- Brown sugar - 1/2 cup
- Pomegranate juice - 2 cups
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef ribs - 2 racks
Let's Get Started
- Preheat the oven to 300°F. Season the ribs with salt and pepper.
- Heat the olive oil in a large oven-safe pot over medium heat. Add the ribs and brown on all sides. Remove the ribs and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the pomegranate juice, brown sugar, and soy sauce. Bring to a simmer.
- Return the ribs to the pot, cover, and transfer to the oven. Cook for 2.5 hours, or until the ribs are tender.
- Remove the ribs from the pot and set aside. Skim off any fat from the surface of the sauce.
- In a small bowl, mix the cornstarch with a little water to make a slurry. Stir the slurry into the sauce and bring to a simmer. Cook until the sauce has thickened.
- Brush the ribs with the glaze and serve.
