Chicago Style Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and shrimp and cook until they are cooked through. Remove them from the skillet and set aside.
  2. In the same skillet, add the remaining oil. Add the onions, bell peppers, and garlic and cook until they are soft.
  3. Add the rice to the skillet and stir to combine. Cook for a few minutes until the rice is heated through.
  4. Push the rice to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs and then mix them into the rice.
  5. Add the cooked chicken and shrimp back into the skillet. Add the soy sauce and stir to combine. Cook for a few more minutes until everything is well combined and heated through.
  6. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
