Chicago Style Fried Rice
This is a delicious and hearty fried rice recipe inspired by the flavors of Chicago. It's packed with vegetables, chicken, and shrimp, making it a complete meal in itself.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2, chopped
- Eggs - 2, beaten
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Bell peppers - 1, diced
- Onions - 1, diced
- Vegetable oil - 2 tablespoons
- Shrimp - 1 cup, peeled and deveined
- Chicken breast - 1, diced
- Cooked rice - 4 cups
Let's Get Started
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and shrimp and cook until they are cooked through. Remove them from the skillet and set aside.
- In the same skillet, add the remaining oil. Add the onions, bell peppers, and garlic and cook until they are soft.
- Add the rice to the skillet and stir to combine. Cook for a few minutes until the rice is heated through.

- Season with salt and pepper to taste. Garnish with chopped green onions before serving.
