Pozole Verde
Pozole Verde is a traditional Mexican soup made with hominy, chicken, and a flavorful green sauce.
Ingredients - Serves 6
- Tortilla chips - 1 cup, crushed
- Avocado - 1, sliced
- Radishes - 6, sliced
- Salt and pepper - To taste
- Lime juice - 2 tablespoons
- Fresh cilantro - 1 cup, chopped
- Jalapeno peppers - 2, seeded and chopped
- Tomatillos - 1 lb, husked and quartered
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Chicken thighs - 1.5 lbs, bone-in
- Dried hominy - 2 cups
Let's Get Started
- Rinse the dried hominy and soak it in water overnight. Drain and rinse again.
- In a large pot, combine the soaked hominy, chicken thighs, chopped onion, minced garlic, and enough water to cover. Bring to a boil, then reduce the heat and simmer for 1.5 hours, or until the hominy is tender and the chicken is cooked through.
- While the hominy and chicken are cooking, prepare the green sauce. In a blender, combine the tomatillos, jalapeno peppers, chopped cilantro, lime juice, salt, and pepper. Blend until smooth.
- Once the chicken is cooked, remove it from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.
- Add the green sauce to the pot and simmer for an additional 30 minutes to allow the flavors to meld together.
- Serve the pozole verde hot, garnished with sliced radishes, avocado, and crushed tortilla chips.
