Ingredients - Serves 6

Let's Get Started

  1. Rinse the dried hominy and soak it in water overnight. Drain and rinse again.
  2. In a large pot, combine the soaked hominy, chicken thighs, chopped onion, minced garlic, and enough water to cover. Bring to a boil, then reduce the heat and simmer for 1.5 hours, or until the hominy is tender and the chicken is cooked through.
  3. While the hominy and chicken are cooking, prepare the green sauce. In a blender, combine the tomatillos, jalapeno peppers, chopped cilantro, lime juice, salt, and pepper. Blend until smooth.
  4. Once the chicken is cooked, remove it from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.
  5. Add the green sauce to the pot and simmer for an additional 30 minutes to allow the flavors to meld together.
  6. Serve the pozole verde hot, garnished with sliced radishes, avocado, and crushed tortilla chips.
