Ingredients - Serves 4

Let's Get Started

  1. Kill the lobsters by inserting a knife into their heads. Cut the lobsters into pieces, cracking the claws to allow the flavors to seep in.
  2. Heat the oil in a wok or large frying pan over high heat. Add the lobster pieces and stir-fry until they turn red. Remove and set aside.
  3. In the same wok, add the ginger and scallions and stir-fry until fragrant.
  4. Return the lobster pieces to the wok. Add the soy sauce, oyster sauce, and Chinese cooking wine. Stir well to coat the lobster pieces with the sauce.
  5. Add the cornstarch mixture and stir until the sauce thickens.
  6. Serve the Cantonese Lobster hot, garnished with additional scallions if desired.
