Cantonese Lobster
A delicious and flavorful seafood dish, this Cantonese Lobster is stir-fried with ginger, scallions, and a mix of Asian sauces.
Ingredients - Serves 4
- Vegetable oil - For frying
- Cornstarch - 1 tablespoon, mixed with 2 tablespoons of water
- Chinese cooking wine - 1 tablespoon
- Oyster sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Scallions - 4, cut into 2-inch pieces
- Ginger - 1 large piece, sliced
- Live lobsters - 2 medium-sized
Let's Get Started
- Kill the lobsters by inserting a knife into their heads. Cut the lobsters into pieces, cracking the claws to allow the flavors to seep in.
- Heat the oil in a wok or large frying pan over high heat. Add the lobster pieces and stir-fry until they turn red. Remove and set aside.
- In the same wok, add the ginger and scallions and stir-fry until fragrant.
- Return the lobster pieces to the wok. Add the soy sauce, oyster sauce, and Chinese cooking wine. Stir well to coat the lobster pieces with the sauce.
- Add the cornstarch mixture and stir until the sauce thickens.
- Serve the Cantonese Lobster hot, garnished with additional scallions if desired.
