Haemul Pajeon

Ingredients - Serves 4
- Soy sauce - For dipping
- Vegetable oil - 2 tablespoons
- Egg - 1
- Water - 3/4 cup
- Pancake mix - 1 cup, Korean pancake mix preferred
- Mixed seafood - 1 cup, such as shrimp, squid, and clams
- Scallions - 2 bunches, cut into 2-inch lengths
Let's Get Started
- In a large bowl, combine the pancake mix, water, and egg. Stir until well combined.
- Add the scallions and seafood to the batter and mix well.
- Heat the vegetable oil in a large non-stick pan over medium heat.
- Pour the batter into the pan and spread it out evenly.
- Cook for 5-7 minutes, or until the bottom is golden brown.
- Flip the pancake and cook for another 5-7 minutes, or until the other side is golden brown.
- Remove the pancake from the pan and cut into bite-sized pieces.
- Serve hot with soy sauce for dipping.
