Pajeon
Pajeon is a variety of jeon with scallion as its prominent ingredient, as pa means scallion. It is a Korean dish made from a batter of eggs, wheat flour, rice flour, scallions, and often other ingredients depending on the variety.
Ingredients - Serves 4
- Soy sauce - For dipping
- Vegetable oil - 2 tablespoons
- Water - 1 1/2 cups
- Salt - 1/2 teaspoon
- Egg - 1
- Rice flour - 1/2 cup
- All-purpose flour - 1 cup
- Scallions - 2 bunches, cut into 2 inch pieces
Let's Get Started
- In a large bowl, mix together the all-purpose flour, rice flour, egg, salt, and water to make a batter.
- Add the scallions to the batter and stir until they are well coated.
- Heat the vegetable oil in a large non-stick skillet over medium heat.
- Pour the batter into the skillet, spreading the scallions evenly.
- Cook for about 5 minutes, until the bottom is golden brown.
- Flip the pancake and cook for another 5 minutes, until the other side is golden brown.
- Remove the pancake from the skillet and cut into bite-sized pieces.
- Serve hot with soy sauce for dipping.
