Eggplant with Minced Pork

Ingredients - Serves 4
- Green onions - 2, chopped
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 teaspoon, dissolved in 2 tablespoons water
- Sugar - 1 teaspoon
- Oyster sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 3 cloves, minced
- Minced pork - 500 grams
- Eggplant - 2 medium, cut into cubes
Let's Get Started
- Heat the vegetable oil in a wok or large frying pan over medium heat.
- Add the minced pork and cook until browned, about 5 minutes.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the eggplant and stir-fry for 5 minutes, until the eggplant is starting to soften.
- In a small bowl, mix together the soy sauce, oyster sauce, and sugar. Pour this sauce over the eggplant and pork.
- Cover the wok and let the dish simmer for 5 minutes, until the eggplant is fully cooked.
- Stir in the cornstarch mixture and cook for another 2 minutes, until the sauce has thickened.
- Sprinkle the chopped green onions over the dish and serve.
