Ärtsoppa
Ärtsoppa is a traditional Swedish pea soup made with yellow split peas and flavored with pork.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Vinegar - 1 tablespoon
- Mustard - 1 tablespoon
- Thyme - 1 teaspoon
- Bay leaf - 1
- Potato - 1 large, diced
- Carrot - 1 large, diced
- Onion - 1 large, chopped
- Smoked pork shoulder - 1 pound, diced
- Pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Water - 8 cups
- Yellow split peas - 2 cups
Let's Get Started
- Rinse the yellow split peas under cold water.
- In a large pot, combine the split peas, water, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the diced smoked pork shoulder, chopped onion, carrot, potato, bay leaf, and thyme to the pot. Simmer for another 60 minutes, or until the peas and vegetables are tender.
- Remove the bay leaf from the soup.
- Using an immersion blender or a regular blender, puree about half of the soup until smooth. This will give the soup a creamy texture.
- Stir in the mustard and vinegar. Adjust the seasoning with salt and pepper if needed.
- Serve the ärtsoppa hot, garnished with fresh chopped parsley.
