Let's Get Started

  1. Rinse the yellow split peas under cold water.
  2. In a large pot, combine the split peas, water, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  3. Add the diced smoked pork shoulder, chopped onion, carrot, potato, bay leaf, and thyme to the pot. Simmer for another 60 minutes, or until the peas and vegetables are tender.
  4. Remove the bay leaf from the soup.
  5. Using an immersion blender or a regular blender, puree about half of the soup until smooth. This will give the soup a creamy texture.
  6. Stir in the mustard and vinegar. Adjust the seasoning with salt and pepper if needed.
  7. Serve the ärtsoppa hot, garnished with fresh chopped parsley.
