Haight Ashbury Vegan Falafel
A delicious and healthy vegan falafel recipe inspired by the vibrant flavors of Haight-Ashbury district.
Ingredients - Serves 4
- Vegetable oil - For frying
- All-purpose flour - 1-2 tablespoons
- Baking powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Ground coriander - 1/2 teaspoon
- Ground cumin - 1 teaspoon
- Fresh cilantro - 1/2 cup, chopped
- Fresh parsley - 1/2 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Chickpeas - 1 cup, soaked overnight

- Drain the soaked chickpeas and transfer them to a food processor.
- Add the onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper to the food processor and pulse until a coarse mixture forms.
