  1. Rinse the lentils under cold water and place them in a pot with the water. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20 minutes.
  2. While the lentils are cooking, prepare the vegetables and place them in a large bowl.
  3. In a small bowl, whisk together the garlic, olive oil, lemon juice, cumin, paprika, salt, and pepper to make the dressing.
  4. Once the lentils are cooked, drain them and let them cool slightly.
  5. Add the lentils to the bowl with the vegetables and pour the dressing over top. Toss to combine everything well.
  6. Sprinkle the salad with the chopped parsley before serving.
