Moroccan Lentil Salad
A hearty and healthy Moroccan lentil salad with a delicious blend of spices, fresh vegetables, and a tangy lemon dressing.
Ingredients - Serves 4
- Fresh parsley - 1/4 cup, chopped
- Salt and pepper - To taste
- Paprika - 1/2 teaspoon
- Cumin - 1 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1/2, finely chopped
- Cucumber - 1, diced
- Red bell pepper - 1, diced
- Carrot - 1, diced
- Water - 2 cups
- Green lentils - 1 cup
Let's Get Started
- Rinse the lentils under cold water and place them in a pot with the water. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20 minutes.
- While the lentils are cooking, prepare the vegetables and place them in a large bowl.
- In a small bowl, whisk together the garlic, olive oil, lemon juice, cumin, paprika, salt, and pepper to make the dressing.
- Once the lentils are cooked, drain them and let them cool slightly.
- Add the lentils to the bowl with the vegetables and pour the dressing over top. Toss to combine everything well.
- Sprinkle the salad with the chopped parsley before serving.
