Zucchini Muffins
These moist and delicious zucchini muffins are packed with grated zucchini, spices, and a hint of sweetness.
Ingredients - Serves 12
- Walnuts - 1/2 cup, chopped (optional)
- Vanilla extract - 1 teaspoon
- Granulated sugar - 1 cup
- Vegetable oil - 1/2 cup
- Eggs - 2
- Salt - 1/2 teaspoon
- Nutmeg - 1/2 teaspoon
- Cinnamon - 1 teaspoon
- Baking soda - 1/2 teaspoon
- Baking powder - 2 teaspoons
- All-purpose flour - 2 cups
- Zucchini - 2 cups, grated
Let's Get Started
- Preheat the oven to 350°F and line a muffin tin with paper liners.
- In a large bowl, combine the grated zucchini, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the eggs, vegetable oil, sugar, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped walnuts, if using.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
