Zeytinyagli Yaprak Sarma
Zeytinyagli Yaprak Sarma is a traditional Turkish dish made with grape leaves stuffed with a mixture of rice, pine nuts, and herbs, cooked in olive oil.
Ingredients - Serves 6
- Salt and pepper - To taste
- Sugar - 1 teaspoon
- Lemon juice - 2 tablespoons
- Fresh dill - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Currants - 1/4 cup
- Pine nuts - 1/4 cup
- Rice - 1 cup, rinsed
- Onions - 2, finely chopped
- Olive oil - 1/2 cup
- Grape leaves - 1 jar (16 oz)
Let's Get Started
- Rinse the grape leaves and soak in warm water for 20 minutes.
- Heat half of the olive oil in a pan and sauté the onions until soft.
- Add the rice, pine nuts, currants, mint, dill, lemon juice, sugar, salt, and pepper. Cook for 10 minutes, stirring occasionally.
- Drain the grape leaves and pat dry. Place a spoonful of the rice mixture on each leaf and fold the sides over, then roll up tightly.
- Arrange the stuffed leaves seam-side down in a large pot. Drizzle with the remaining olive oil and add enough water to cover the leaves.
- Cover the pot and simmer for 45 minutes, or until the leaves are tender and the rice is cooked.
- Allow the leaves to cool in the pot before serving.
