Zapallitos Rellenos

Ingredients - Serves 4
- Grated cheese - 1/2 cup
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Cooked rice - 1 cup
- Tomato - 1 medium, diced
- Red bell pepper - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Ground beef - 1 pound
- Zucchini - 4 medium-sized
Let's Get Started
- Preheat the oven to 375°F.
- Cut the zucchini in half lengthwise and scoop out the seeds to create a hollow cavity.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
- Stir in the diced tomato, cooked rice, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes.
- Fill each zucchini half with the ground beef mixture and place them in a baking dish.
- Sprinkle grated cheese over the top of each stuffed zucchini.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is melted and golden.
