Yuca Frita
Yuca Frita is a popular dish in Latin America, made from cassava (yuca) roots that are boiled, cut into pieces, and then fried until crispy.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Vegetable oil - For frying
- Salt - 1 teaspoon
- Water - Enough to cover the yuca
- Yuca (cassava) - 1 large root
Let's Get Started
- Peel the yuca and cut it into 3-inch long pieces.
- Place the yuca pieces in a large pot, cover with water, and add the salt. Bring to a boil over high heat, then reduce the heat to medium and cook until the yuca is tender, about 20 minutes.
- Drain the yuca and let it cool. Once it's cool enough to handle, cut each piece in half lengthwise and remove the hard fibrous core.
- Heat the vegetable oil in a deep fryer or large, deep saucepan to 375°F.
- Fry the yuca pieces until golden brown and crispy, about 5 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate to drain.
- Serve the yuca frita hot, with lime wedges on the side for squeezing.
