Ingredients - Serves 4

Let's Get Started

  1. Peel the yuca and cut it into 3-inch long pieces.
  2. Place the yuca pieces in a large pot, cover with water, and add the salt. Bring to a boil over high heat, then reduce the heat to medium and cook until the yuca is tender, about 20 minutes.
  3. Drain the yuca and let it cool. Once it's cool enough to handle, cut each piece in half lengthwise and remove the hard fibrous core.
  4. Heat the vegetable oil in a deep fryer or large, deep saucepan to 375°F.
  5. Fry the yuca pieces until golden brown and crispy, about 5 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate to drain.
  6. Serve the yuca frita hot, with lime wedges on the side for squeezing.
