Argentinean Quinoa and Fruit Salad
This refreshing salad combines quinoa, fresh fruits and a tangy citrus dressing. It's a perfect summer dish that's both nutritious and delicious.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Honey - 2 tablespoons
- Lime - 1, juiced
- Mint leaves - 1/4 cup, chopped
- Blueberries - 1 cup
- Strawberries - 1 cup, hulled and sliced
- Oranges - 2, peeled and segmented
- Salt - 1/2 teaspoon
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, bring the water and salt to a boil. Add the quinoa, reduce the heat to low, cover and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed.
- In a large bowl, combine the cooked quinoa, oranges, strawberries, blueberries and mint leaves.
- In a small bowl, whisk together the lime juice, honey and olive oil. Pour the dressing over the salad and toss to combine.
- Serve the salad chilled or at room temperature.
