Argentinean Quinoa and Fruit Salad

Let's Get Started

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, bring the water and salt to a boil. Add the quinoa, reduce the heat to low, cover and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed.
  3. In a large bowl, combine the cooked quinoa, oranges, strawberries, blueberries and mint leaves.
  4. In a small bowl, whisk together the lime juice, honey and olive oil. Pour the dressing over the salad and toss to combine.
  5. Serve the salad chilled or at room temperature.
