Andina
Andina is a traditional Peruvian dish made with quinoa, vegetables, and a tangy citrus dressing.
Ingredients - Serves 4
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Red onion - 1/2, diced
- Green bell pepper - 1, diced
- Red bell pepper - 1, diced
- Salt - 1/2 teaspoon
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, bring the water and salt to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed.
- In a large bowl, combine the cooked quinoa, bell peppers, onion, and cilantro.
