Ingredients - Serves 6

Let's Get Started

  1. Rinse the beef tongue under cold water and place it in a large pot.
  2. Add the chopped onion, minced garlic, bay leaves, salt, and pepper to the pot.
  3. Cover the ingredients with water and bring the pot to a boil over high heat.
  4. Once boiling, reduce the heat to low and let it simmer for about 4 hours, or until the tongue is tender.
  5. Remove the tongue from the pot and let it cool. Once cool, peel off the rough outer layer of the tongue.
  6. Chop the tongue into small pieces and set aside.
  7. Warm the corn tortillas in a dry skillet over medium heat.
  8. Place some of the chopped tongue on each tortilla and top with diced onion and chopped cilantro.
  9. Serve the tacos with lime wedges on the side for squeezing.
