Lengua Tacos
Tender beef tongue simmered in a rich and flavorful sauce, served on warm corn tortillas with fresh toppings.
Ingredients - Serves 6
- Lime - 1, cut into wedges
- Onion - 1/2, diced
- Cilantro - 1/2 cup, chopped
- Corn tortillas - 12
- Water - Enough to cover the tongue
- Pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Bay leaves - 2
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Beef tongue - 1 whole
Let's Get Started
- Rinse the beef tongue under cold water and place it in a large pot.
- Add the chopped onion, minced garlic, bay leaves, salt, and pepper to the pot.
- Cover the ingredients with water and bring the pot to a boil over high heat.
- Once boiling, reduce the heat to low and let it simmer for about 4 hours, or until the tongue is tender.
- Remove the tongue from the pot and let it cool. Once cool, peel off the rough outer layer of the tongue.
- Chop the tongue into small pieces and set aside.
- Warm the corn tortillas in a dry skillet over medium heat.
- Place some of the chopped tongue on each tortilla and top with diced onion and chopped cilantro.
- Serve the tacos with lime wedges on the side for squeezing.
