Yachaejeon
Yachaejeon is a delicious Korean vegetable pancake. It's a perfect appetizer or snack, and can be easily customized with your favorite vegetables.
Ingredients - Serves 4
- Soy sauce - For dipping
- Vegetable oil - 2 tablespoons
- Assorted vegetables (carrots, bell peppers, onions, green onions) - 2 cups, thinly sliced
- Salt - 1/2 teaspoon
- Egg - 1
- Water - 3/4 cup
- All-purpose flour - 1 cup
Let's Get Started
- In a large bowl, combine the flour, water, egg, and salt. Stir until smooth.
- Add the sliced vegetables to the batter and stir until they are well coated.
- Heat the vegetable oil in a large non-stick skillet over medium heat.
- Pour the vegetable and batter mixture into the skillet, spreading it out into a large pancake.
- Cook for about 5 minutes, until the bottom is golden brown. Flip the pancake and cook for another 5 minutes, until the other side is golden brown.
- Remove the pancake from the skillet and cut it into wedges.
- Serve hot with soy sauce for dipping.
