Ingredients - Serves 4
- Soy sauce - For dipping
- Vegetable oil - 2 tablespoons
- Shrimp - 1/2 cup, chopped
- Red bell pepper - 1/2 cup, thinly sliced
- Zucchini - 1/2 cup, thinly sliced
- Green onions - 1 cup, chopped
- Salt - 1/2 teaspoon
- Egg - 1
- Cold water - 3/4 cup
- All-purpose flour - 1 cup
Let's Get Started
- In a large bowl, mix together the flour, water, egg, and salt until smooth.
- Add the green onions, zucchini, bell pepper, and shrimp to the batter and stir until well combined.
- Heat the oil in a large non-stick skillet over medium heat.
- Pour a quarter of the batter into the skillet and spread it out into a thin, round pancake.
- Cook for 3-4 minutes, or until the bottom is golden brown and crispy.
- Flip the pancake and cook for another 3-4 minutes, or until the other side is golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm with soy sauce for dipping.
