  1. Cut the pork belly into small pieces and mix with soy sauce, sugar, and minced ginger.
  2. Dissolve the gelatin in the chicken stock and refrigerate until it forms a jelly.
  3. Mix the jelly with the pork belly mixture.
  4. Place a spoonful of the mixture in the center of each dumpling wrapper.
  5. Fold the dumpling wrapper over the filling and pleat the edges to seal.
  6. Place the dumplings on cabbage leaves in a steamer.
  7. Steam the dumplings over high heat for about 10 minutes.
  8. Serve hot with vinegar and ginger slices.
