Shanghai Steamed Soup Dumplings
These traditional Shanghai soup dumplings, also known as xiaolongbao, are filled with pork and a savory broth that's deliciously warming.
Ingredients - Serves 4
- Vinegar - For dipping
- Cabbage leaves - For steaming
- Dumpling wrappers - 24
- Ginger - 1 tablespoon, minced
- Sugar - 1 teaspoon
- Soy sauce - 2 tablespoons
- Chicken broth - 1 cup
- Gelatin - 1 tablespoon
- Pork - 1/2 pound, minced
Let's Get Started
- Mix the pork, gelatin, chicken broth, soy sauce, sugar, and ginger in a bowl. Refrigerate for at least 2 hours until the mixture solidifies.
- Place a spoonful of the pork mixture in the center of each dumpling wrapper. Fold the edges of the wrapper over the filling and pinch to seal.
- Place the dumplings on cabbage leaves in a steamer basket.
- Steam the dumplings over boiling water for about 10 minutes, until the filling is cooked through.
- Serve the dumplings hot, with vinegar for dipping.
