Wild Rice Soup
This creamy and hearty wild rice soup is packed with vegetables and tender wild rice.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Milk - 2 cups
- All-purpose flour - 1/4 cup
- Butter - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Chicken broth - 4 cups
- Wild rice - 1 cup
Let's Get Started
- Cook the wild rice according to package instructions. Drain and set aside.
- In a large pot, melt the butter over medium heat.
- Add the carrots, celery, onion, and garlic. Cook until the vegetables are tender, about 5 minutes.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the chicken broth and milk.
- Add the cooked wild rice and dried thyme. Season with salt and pepper.
- Bring the soup to a simmer and cook for 20 minutes, or until the flavors are well combined.
- Serve hot, garnished with fresh parsley.
