  1. Preheat the oven to 200°C (180°C fan) mark 6.
  2. Roll out the puff pastry on a lightly floured surface and transfer to a baking sheet.
  3. Crumble the Roquefort cheese evenly over the pastry, leaving a 2cm border around the edge.
  4. Arrange the pear slices on top of the cheese.
  5. Fold the edges of the pastry over the filling to create a border.
  6. Brush the edges of the pastry with the beaten egg.
  7. Bake for 20-25 minutes, or until the pastry is golden and the cheese is melted.
  8. Drizzle the tart with honey and sprinkle with chopped walnuts before serving.
