  1. Soak the beans overnight in plenty of water.
  2. Preheat your oven to 300°F.
  3. Drain the beans and place them in a large oven-safe pot.
  4. Add the maple syrup, onion, mustard, salt, pepper, and bacon to the pot.
  5. Pour in enough water to cover the beans by about an inch.
  6. Cover the pot and place it in the oven.
  7. Bake for 6 hours, or until the beans are tender and the sauce is thick and syrupy.
  8. Stir the beans every hour, adding more water if necessary.
  9. Serve the beans hot, with a drizzle of extra maple syrup if desired.
