Bindaetteok
Bindaetteok, also known as mung bean pancake, is a traditional Korean dish. It's a savory pancake made from ground mung beans, vegetables, and meat.
Ingredients - Serves 4
- Vegetable oil - For frying
- Pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Green onions - 2, chopped
- Mung bean sprouts - 1/2 cup
- Pork belly - 100g, thinly sliced
- Kimchi - 1/2 cup, chopped
- Water - 2 cups
- Dried mung beans - 1 cup
Let's Get Started
- Soak the mung beans in water for at least 2 hours, or until they become soft.
- Drain the mung beans and blend them in a food processor until they form a thick paste.
- In a large bowl, combine the mung bean paste, kimchi, pork belly, mung bean sprouts, green onions, salt, and pepper.
- Heat the vegetable oil in a frying pan over medium heat.
- Scoop a spoonful of the mung bean mixture into the pan and flatten it with the back of the spoon.
- Cook the pancake for about 3-5 minutes on each side, or until it becomes golden brown.
- Repeat the process with the remaining mung bean mixture.
- Serve the bindaetteok warm with a side of soy sauce for dipping.
