Ingredients - Serves 6

Let's Get Started

  1. In a large bowl, combine the flour, egg, salt, and water. Knead until the dough is smooth and elastic.
  2. Cover the dough and let it rest for 30 minutes.
  3. Meanwhile, boil the potatoes until tender. Drain and mash with the cheese until smooth.
  4. In a skillet, sauté the onion in butter until golden. Stir into the potato mixture.
  5. Roll out the dough on a floured surface. Cut out circles with a cookie cutter.
  6. Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
  7. Boil the pierogies in salted water until they float to the top. Drain.
  8. Serve the pierogies warm with sour cream or applesauce.
