Pierogies
Traditional Polish dumplings filled with a savory potato and cheese filling.
Ingredients - Serves 6
- Butter - 2 tablespoons
- Onion - 1, finely chopped
- Cheddar cheese - 1 cup, shredded
- Potatoes - 2 large, peeled and cubed
- Water - 1/2 cup
- Salt - 1/2 teaspoon
- Egg - 1
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour, egg, salt, and water. Knead until the dough is smooth and elastic.
- Cover the dough and let it rest for 30 minutes.
- Meanwhile, boil the potatoes until tender. Drain and mash with the cheese until smooth.
- In a skillet, sauté the onion in butter until golden. Stir into the potato mixture.
- Roll out the dough on a floured surface. Cut out circles with a cookie cutter.
- Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
- Boil the pierogies in salted water until they float to the top. Drain.
- Serve the pierogies warm with sour cream or applesauce.
