  1. Preheat the oven to 180°C.
  2. Season the pork roast with salt, pepper, and minced garlic.
  3. In a large oven-safe pot, melt the butter over medium heat. Add the pork roast and brown on all sides.
  4. Remove the pork from the pot and set aside. In the same pot, add the sauerkraut, caraway seeds, and water. Stir well.
  5. Place the pork roast on top of the sauerkraut in the pot.
  6. Cover the pot and place it in the preheated oven. Cook for about 3 hours, or until the pork is tender.
  7. Remove the pot from the oven and let it rest for a few minutes before serving.
  8. Serve the pork roast with the sauerkraut on the side.
