Veggie Spring Rolls
These fresh and healthy veggie spring rolls are filled with colorful vegetables and served with a delicious dipping sauce.
Ingredients - Serves 4
- Peanut sauce - 1/2 cup, for dipping
- Bean sprouts - 1 cup
- Fresh cilantro leaves - 1/4 cup
- Fresh mint leaves - 1/4 cup
- Lettuce - 4 leaves, torn
- Bell pepper - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Carrots - 1 large, julienned
- Rice paper wrappers - 8 sheets
Let's Get Started
- Prepare all the vegetables by julienning them and tearing the lettuce leaves.
- Fill a large bowl with warm water.
- Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
- Place the softened wrapper on a clean surface.
- Layer a small amount of each vegetable, mint leaves, cilantro leaves, and bean sprouts on the lower third of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to form a spring roll.
- Repeat with the remaining ingredients.
- Serve the veggie spring rolls with peanut sauce for dipping.
