Kanom Jeen Sao Nam
Kanom Jeen Sao Nam is a refreshing Thai noodle salad with a coconut milk dressing, fresh vegetables, and sweet pineapple.
Ingredients - Serves 4
- Dried shrimp - 2 tablespoons
- Fresh cilantro leaves - 1/2 cup
- Fresh mint leaves - 1/2 cup
- Bean sprouts - 1 cup
- Cucumber - 1, thinly sliced
- Fresh pineapple - 1 cup, diced
- Lime juice - 2 tablespoons
- Palm sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Coconut milk - 1 cup
- Rice noodles - 200 grams
Let's Get Started
- Cook the rice noodles according to the package instructions. Rinse under cold water and set aside.
- In a small saucepan, combine the coconut milk, fish sauce, palm sugar, and lime juice. Heat over medium heat until the sugar is dissolved. Let cool.
- In a large bowl, combine the cooked noodles, pineapple, cucumber, bean sprouts, mint leaves, cilantro leaves, and dried shrimp.
- Pour the cooled coconut milk dressing over the noodle salad and toss to combine.
- Serve the salad chilled.
