Bo Bia
Bo Bia is a popular Vietnamese street food made with fresh spring roll wrappers filled with a variety of ingredients.
Ingredients - Serves 4
- Peanut sauce - For dipping
- Cooked chinese sausage - 8 slices
- Cooked shrimp - 8 pieces
- Fresh herbs (such as mint, cilantro, and thai basil) - 1 cup, chopped
- Lettuce - 8 leaves
- Cucumber - 1 cup, julienned
- Carrots - 1 cup, julienned
- Jicama - 1 cup, julienned
- Rice paper wrappers - 8 sheets
Let's Get Started
- Prepare all the ingredients by julienning the jicama, carrots, and cucumber.
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
- Place the softened rice paper wrapper on a clean surface.
- Layer a lettuce leaf on top of the rice paper wrapper.
- Add a small handful of julienned jicama, carrots, and cucumber on top of the lettuce leaf.
- Sprinkle some fresh herbs on top of the vegetables.
- Place a piece of cooked shrimp and a slice of Chinese sausage on top of the herbs.
- Fold the sides of the rice paper wrapper over the filling, then roll it up tightly.
- Repeat the process with the remaining ingredients to make more spring rolls.
- Serve the Bo Bia spring rolls with peanut sauce for dipping.
