Ingredients - Serves 4

Let's Get Started

  1. Prepare all the ingredients by julienning the jicama, carrots, and cucumber.
  2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
  3. Place the softened rice paper wrapper on a clean surface.
  4. Layer a lettuce leaf on top of the rice paper wrapper.
  5. Add a small handful of julienned jicama, carrots, and cucumber on top of the lettuce leaf.
  6. Sprinkle some fresh herbs on top of the vegetables.
  7. Place a piece of cooked shrimp and a slice of Chinese sausage on top of the herbs.
  8. Fold the sides of the rice paper wrapper over the filling, then roll it up tightly.
  9. Repeat the process with the remaining ingredients to make more spring rolls.
  10. Serve the Bo Bia spring rolls with peanut sauce for dipping.
