Goi Cuon
Goi Cuon, also known as Vietnamese Fresh Spring Rolls, are a healthy and refreshing appetizer. They are made with shrimp, pork, fresh vegetables, herbs, and rice vermicelli, all wrapped in a soft rice paper.
Ingredients - Serves 4
- Bean sprouts - 1 cup
- Fresh cilantro - 1/2 cup
- Fresh mint leaves - 1/2 cup
- Lettuce - 8 leaves
- Rice paper wrappers - 8
- Cooked pork - 4 ounces, thinly sliced
- Cooked shrimp - 8, peeled and deveined
- Rice vermicelli noodles - 2 ounces
Let's Get Started
- Cook the rice vermicelli noodles according to the package instructions. Drain and set aside.
- Prepare the shrimp and pork and set aside.
- Dip a rice paper wrapper in warm water until it softens, then lay it flat on a clean surface.
- On one edge of the wrapper, place a small amount of noodles, a piece of lettuce, a few mint leaves, a few sprigs of cilantro, some bean sprouts, a slice of pork, and a shrimp.
- Roll the wrapper tightly, tucking in the sides as you go.
- Repeat with the remaining ingredients.
- Serve the spring rolls with a dipping sauce of your choice.
