Vegetarian Burritos
These delicious vegetarian burritos are filled with a flavorful combination of vegetables, beans, and spices.
Ingredients - Serves 4
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Salsa - 1/2 cup
- Avocado - 1, sliced
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Corn - 1 cup
- Zucchini - 1, diced
- Onion - 1, thinly sliced
- Bell peppers - 2, thinly sliced
- Black beans - 1 can, drained and rinsed
- Tortillas - 4 large
Let's Get Started
- Heat a tablespoon of oil in a large skillet over medium heat.
- Add the bell peppers, onion, zucchini, and corn. Cook until the vegetables are tender, about 5-7 minutes.
- Add the black beans, cumin, chili powder, salt, and pepper. Stir well to combine and cook for another 2-3 minutes.
- Warm the tortillas in a dry skillet or microwave.
