Birria Tacos with Consommé
Birria Tacos are a traditional Mexican dish made with slow-cooked meat, usually goat or beef, marinated in a rich adobo sauce. The meat is then shredded and served in a tortilla with a side of the flavorful consommé for dipping.
Ingredients - Serves 6
- Lime - 1, cut into wedges
- Corn tortillas - 12
- Cilantro - 1 bunch
- Bay leaves - 2
- Oregano - 1 tablespoon
- Cumin - 1 tablespoon
- White onion - 1 large
- Garlic - 6 cloves
- Ancho chiles - 4, dried
- Guajillo chiles - 6, dried
- Beef chuck roast - 3 pounds
Let's Get Started
- Toast the dried chiles in a dry pan over medium heat until they become fragrant. Remove from heat and soak in hot water for 30 minutes.
- Blend the soaked chiles, garlic, half of the onion, cumin, and oregano with some of the chile soaking water until smooth.
- Season the beef with salt and pepper and place in a large pot. Pour the chile sauce over the beef and add enough water to cover the meat. Add the bay leaves.
- Bring the pot to a boil, then reduce to a simmer. Cover and cook for about 4 hours, or until the beef is tender and can be easily shredded with a fork.
- Remove the beef from the pot and shred. Strain the remaining broth to create the consommé.
- Heat the tortillas in a dry pan over medium heat. Fill with the shredded beef and fold in half. Cook until crispy, then flip and cook the other side.
- Serve the tacos with the consommé for dipping, garnished with the remaining onion, cilantro, and lime wedges.
