Embarcadero Elote
A delicious and flavorful Mexican street corn recipe, also known as Elote. This dish is grilled and slathered in a creamy chili, lime, and cheese mixture.
Ingredients - Serves 4
- Salt - To taste
- Cilantro - 1/4 cup, chopped
- Cotija cheese - 1/2 cup, crumbled
- Chili powder - 1 teaspoon
- Lime - 1, juiced
- Sour cream - 1/4 cup
- Mayonnaise - 1/4 cup
- Corn - 4 ears, husked
Let's Get Started
- Preheat your grill to medium-high heat.
- Grill the corn, turning occasionally, until it is cooked and charred in spots, about 10 minutes.
- While the corn is grilling, mix together the mayonnaise, sour cream, lime juice, and chili powder in a bowl.
- When the corn is done, brush it with the creamy mixture. Sprinkle with the crumbled Cotija cheese and chopped cilantro.
- Season with salt to taste.
- Serve the Embarcadero Elote immediately, with extra lime wedges on the side.
