Vegan Tofu Scramble
This vegan tofu scramble is a delicious and healthy alternative to scrambled eggs. It's packed with protein and flavor!
Ingredients - Serves 2
- Fresh parsley - 2 tablespoons, chopped
- Nutritional yeast - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt and pepper - To taste
- Spinach - 1 cup
- Bell pepper - 1/2, diced
- Onion - 1/2, diced
- Garlic powder - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Extra firm tofu - 1 block
Let's Get Started
- Drain and press the tofu to remove excess moisture.
- In a small bowl, mix together the turmeric, cumin, paprika, and garlic powder.
- Crumble the tofu into a bowl and sprinkle the spice mixture over it. Mix well to coat the tofu.
- Heat olive oil in a skillet over medium heat.
- Add the diced onion and bell pepper to the skillet and sauté until softened.
- Add the seasoned tofu to the skillet and cook for 5-7 minutes, stirring occasionally.
- Add the spinach and cook for an additional 2-3 minutes, until wilted.
- Season with salt and pepper to taste.
- Remove from heat and sprinkle nutritional yeast over the tofu scramble. Mix well.
- Garnish with fresh parsley and serve hot.
