  1. Clean the portobello mushrooms and remove the stems.
  2. In a small bowl, mix together the olive oil, soy sauce, minced garlic, and black pepper.
  3. Brush the mushrooms with the marinade and let them sit for 15 minutes.
  4. Preheat the grill or a grill pan over medium heat.
  5. Grill the mushrooms for 5-7 minutes on each side, until they are tender and well browned.
  6. Toast the whole grain buns on the grill for a minute or two, until they are lightly toasted.
  7. Spread vegan mayo on the buns, then layer on the lettuce, tomato, and red onion.
  8. Place the grilled portobello mushroom on top, then close the bun. Serve immediately.
