Vegan Portobello Mushroom Burger
A hearty and delicious plant-based burger made with marinated portobello mushrooms and topped with fresh vegetables.
Ingredients - Serves 4
- Vegan mayo - To taste
- Red onion - 1 small, sliced
- Tomato - 1 large, sliced
- Lettuce - 4 leaves
- Whole grain buns - 4
- Black pepper - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Olive oil - 2 tablespoons
- Portobello mushrooms - 4 large
Let's Get Started
- Clean the portobello mushrooms and remove the stems.
- In a small bowl, mix together the olive oil, soy sauce, minced garlic, and black pepper.
- Brush the mushrooms with the marinade and let them sit for 15 minutes.
- Preheat the grill or a grill pan over medium heat.
- Grill the mushrooms for 5-7 minutes on each side, until they are tender and well browned.
- Toast the whole grain buns on the grill for a minute or two, until they are lightly toasted.
- Spread vegan mayo on the buns, then layer on the lettuce, tomato, and red onion.
- Place the grilled portobello mushroom on top, then close the bun. Serve immediately.
