Veg Kurma
Veg Kurma is a delicious Indian curry made with mixed vegetables, spices, coconut, and cashews. It's a perfect side dish for roti, naan, or rice.
Ingredients - Serves 4
- Coriander leaves - For garnish
- Salt - To taste
- Oil - 2 tablespoons
- Cashews - 10
- Coconut - 1/2 cup, grated
- Garam masala powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chilli powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Ginger-garlic paste - 1 teaspoon
- Green chillies - 2, slit
- Tomato - 1, finely chopped
- Onion - 1, finely chopped
- Mixed vegetables - 2 cups, chopped
Let's Get Started
- Heat oil in a pan and sauté onions until they turn golden brown.
- Add the ginger-garlic paste and green chillies, sauté for a few minutes.
- Add the chopped tomatoes and cook until they turn mushy.
- Add the turmeric powder, red chilli powder, coriander powder, and garam masala. Mix well.
- Add the chopped vegetables and salt. Cook until the vegetables are tender.
- In the meantime, grind the grated coconut and cashews into a smooth paste with some water.
- Add this paste to the cooked vegetables and mix well. Cook for another 5-10 minutes.
- Garnish with coriander leaves and serve hot with roti, naan, or rice.
