Ingredients - Serves 4

Let's Get Started

  1. Heat oil in a pan and sauté onions until they turn golden brown.
  2. Add the ginger-garlic paste and green chillies, sauté for a few minutes.
  3. Add the chopped tomatoes and cook until they turn mushy.
  4. Add the turmeric powder, red chilli powder, coriander powder, and garam masala. Mix well.
  5. Add the chopped vegetables and salt. Cook until the vegetables are tender.
  6. In the meantime, grind the grated coconut and cashews into a smooth paste with some water.
  7. Add this paste to the cooked vegetables and mix well. Cook for another 5-10 minutes.
  8. Garnish with coriander leaves and serve hot with roti, naan, or rice.
