Vatapá
Vatapá is a delicious, rich Brazilian dish made with shrimp, bread, coconut milk, finely ground nuts and palm oil mashed into a creamy paste.
Ingredients - Serves 6
- Salt - To taste
- Cashews - 1/2 cup, finely ground
- Peanuts - 1/2 cup, finely ground
- Red pepper - 1, chopped
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Palm oil - 2 tablespoons
- Coconut milk - 2 cups
- Day-old bread - 4 slices, crusts removed
- Dried shrimp - 1 cup
Let's Get Started
- Soak the dried shrimp in warm water for 15 minutes, then drain and set aside.
- Soak the bread in coconut milk until it's soft, then squeeze out the excess milk.
- In a large pot, heat the palm oil over medium heat. Add the onions, garlic, and red pepper and cook until the onions are soft.
- Add the soaked shrimp, soaked bread, ground peanuts, ground cashews, and salt to the pot. Stir well to combine.
- Cook the mixture over low heat for about 20 minutes, stirring constantly, until it becomes a thick paste.
- Serve the vatapá warm, with rice or farofa on the side.
