Karniyarik
Karniyarik is a traditional Turkish dish consisting of eggplant stuffed with a mix of sautéed chopped onions, garlic, black pepper, tomatoes, parsley and ground meat.
Ingredients - Serves 4
- Olive oil - 4 tablespoons
- Salt - To taste
- Black pepper - 1 teaspoon
- Parsley - 1 bunch, chopped
- Green bell pepper - 1, chopped
- Tomatoes - 4, chopped
- Garlic - 2 cloves, minced
- Onions - 2, chopped
- Ground beef - 500 grams
- Eggplants - 4 medium
Let's Get Started
- Preheat the oven to 200°C (392°F).
- Cut the eggplants in half lengthwise leaving the stem intact. Make deep cuts lengthwise without cutting the skin on the other side.
- Sprinkle salt over the eggplants and leave them for 15 minutes.
- Heat 2 tablespoons of olive oil in a pan and sauté the onions until they are soft.
- Add the ground beef to the pan and cook until it's browned.
- Add the garlic, tomatoes, green bell pepper, parsley, black pepper, and salt to the pan and cook for another 10 minutes.
- Rinse the eggplants and dry them with a paper towel. Heat the remaining olive oil in a pan and fry the eggplants on all sides until they are soft.
- Place the eggplants in a baking dish and fill them with the ground beef mixture.
- Bake in the preheated oven for about 40 minutes, or until the eggplants are cooked and the tops are browned.
- Serve the Karniyarik hot with a side of rice or bread.
