Karniyarik is a traditional Turkish dish consisting of eggplant stuffed with a mix of sautéed chopped onions, garlic, black pepper, tomatoes, parsley and ground meat.

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 200°C (392°F).
  2. Cut the eggplants in half lengthwise leaving the stem intact. Make deep cuts lengthwise without cutting the skin on the other side.
  3. Sprinkle salt over the eggplants and leave them for 15 minutes.
  4. Heat 2 tablespoons of olive oil in a pan and sauté the onions until they are soft.
  5. Add the ground beef to the pan and cook until it's browned.
  6. Add the garlic, tomatoes, green bell pepper, parsley, black pepper, and salt to the pan and cook for another 10 minutes.
  7. Rinse the eggplants and dry them with a paper towel. Heat the remaining olive oil in a pan and fry the eggplants on all sides until they are soft.
  8. Place the eggplants in a baking dish and fill them with the ground beef mixture.
  9. Bake in the preheated oven for about 40 minutes, or until the eggplants are cooked and the tops are browned.
  10. Serve the Karniyarik hot with a side of rice or bread.
