Kashmiri Rajma
Kashmiri Rajma is a delicious and healthy curry made with red kidney beans. It is a popular dish in the Indian state of Jammu and Kashmir.
Ingredients - Serves 4
- Oil - 2 tablespoons
- Salt - To taste
- Garam masala - 1/2 teaspoon
- Red chilli powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Green chillies - 2, slit
- Ginger - 1 inch piece, grated
- Garlic - 4 cloves, minced
- Tomatoes - 2, finely chopped
- Onions - 2, finely chopped
- Water - 3 cups
- Rajma (red kidney beans) - 1 cup
Let's Get Started
- Soak the rajma overnight in water.
- Drain the water and rinse the rajma. Add 3 cups of water and pressure cook for 5-6 whistles.
- Heat oil in a pan and add cumin seeds. Once they start to splutter, add onions and sauté until golden brown.
- Add the ginger, garlic, and green chillies. Sauté for a few minutes until the raw smell goes away.
- Add the tomatoes and cook until they are soft and mushy.
- Add the coriander powder, turmeric powder, red chilli powder, and salt. Mix well.
- Add the cooked rajma along with the water it was cooked in. Mix well and bring to a boil.
- Reduce the heat and simmer for 15-20 minutes.
- Add the garam masala and mix well. Cook for another 2-3 minutes.
- Serve hot with rice or roti.
