Vatapa
Vatapá is a traditional Brazilian dish made with shrimp, coconut milk, peanuts, and spices. It is typically served with rice or acarajé.
Ingredients - Serves 6
- Pepper - To taste
- Salt - To taste
- Lime juice - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Palm oil - 2 tablespoons
- Dendê oil - 2 tablespoons
- Bread - 2 slices, crust removed
- Peanuts - 1/2 cup, unsalted
- Coconut milk - 2 cups
- Red bell pepper - 1, chopped
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Dried shrimp - 1/4 cup
- Shrimp - 1 lb, peeled and deveined
Let's Get Started
- In a blender, combine the dried shrimp, onion, garlic, ginger, red bell pepper, coconut milk, peanuts, and bread. Blend until smooth.
- Heat the dendê oil and palm oil in a large pot over medium heat.
- Add the shrimp and cook until pink and cooked through, about 5 minutes. Remove the shrimp from the pot and set aside.
- In the same pot, add the blended mixture and cook for about 10 minutes, stirring constantly.
- Return the cooked shrimp to the pot and stir to combine. Cook for an additional 5 minutes.
- Stir in the chopped cilantro and lime juice. Season with salt and pepper to taste.
- Serve hot with rice or acarajé.
