Sullungtang
Sullungtang is a traditional Korean soup made with beef bones and brisket, simmered for hours to create a rich and flavorful broth.
Ingredients - Serves 4
- Cooked rice - 4 cups
- Sesame oil - 2 tablespoons
- Green onions - 4, chopped
- Pepper - 1 teaspoon
- Salt - 2 teaspoons
- Ginger - 1-inch piece, sliced
- Garlic - 6 cloves, minced
- Water - 12 cups
- Beef brisket - 1 lb
- Beef bones - 2 lbs
Let's Get Started
- Place the beef bones and brisket in a large pot and cover with water. Bring to a boil, then reduce the heat and simmer for 6 hours, skimming off any impurities that rise to the surface.
- After 6 hours, remove the bones and brisket from the pot. Discard any fat or gristle from the brisket and slice it thinly.
- Return the sliced brisket to the pot and add the minced garlic, sliced ginger, salt, and pepper. Simmer for another 2 hours.
- Remove the ginger slices from the pot and discard.
- To serve, ladle the soup into bowls and top with chopped green onions. Drizzle with sesame oil.
- Serve with cooked rice on the side.
