Valdiviano
Valdiviano is a traditional Chilean soup made with dried beef, potatoes, onions, and carrots. It's a hearty and comforting dish that's perfect for cold winter nights.
Ingredients - Serves 4
- Salt and pepper - To taste
- Water - 6 cups
- Garlic - 2 cloves, minced
- Carrots - 2, peeled and diced
- Onions - 2, chopped
- Potatoes - 4, peeled and diced
- Dried beef - 200 grams
Let's Get Started
- Soak the dried beef in water overnight to rehydrate it. Drain and cut into small pieces.
- In a large pot, heat some oil over medium heat. Add the onions and garlic and cook until they are soft and fragrant.
- Add the rehydrated beef to the pot and cook until it is browned.
- Add the potatoes, carrots, water, salt, and pepper to the pot. Bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 2 hours, or until the beef is tender and the flavors are well combined.
- Taste and adjust the seasoning if necessary. Serve hot.
