Let's Get Started

  1. Heat 2 tablespoons of oil in a pan, add mustard seeds and curry leaves. Once they splutter, add chopped ginger, garlic and green chilies. Saute for a minute.
  2. Add turmeric powder and salt to the pan and mix well. Add the mashed potatoes and mix until all the ingredients are well combined. Remove from heat and let it cool.
  3. Once the potato mixture is cool, make small balls out of it and set aside.
  4. In a bowl, mix gram flour, a pinch of salt, and water to make a thick batter.
  5. Heat oil in a deep frying pan. Dip each potato ball in the batter and deep fry until golden brown. Drain on paper towels.
  6. Slice each bread bun in half, spread some green chutney and tamarind chutney on the inside of the bun. Place a potato fritter (vada) inside the bun.
  7. Serve the Vada Pav hot with some fried green chilies and chutney on the side.
