Vada
Vada is a category of savoury fried snacks from India. Different types of vadas can be described variously as fritters, cutlets, doughnuts, or dumplings. This recipe is for a basic urad dal vada, a crispy, deep-fried snack that's perfect with chutney or sambar.
Ingredients - Serves 4
- Oil - For deep frying
- Salt - To taste
- Black pepper - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Ginger - 1 inch piece, finely chopped
- Green chillies - 2, finely chopped
- Water - 2 cups, for soaking
- Urad dal - 1 cup
Let's Get Started
- Soak the urad dal in water for at least 2 hours.
- Drain the water and grind the dal to a smooth paste, adding very little water if necessary.
- Add the chopped green chillies, ginger, cumin seeds, black pepper, and salt to the dal paste and mix well.
- Heat oil in a deep frying pan.
- Wet your hands and take a small amount of the dal mixture. Shape it into a round disc and make a hole in the center.
- Gently drop the vada into the hot oil and fry until it turns golden brown.
- Remove the vada with a slotted spoon and drain on paper towels.
- Serve hot with chutney or sambar.
