Vada

Vada is a category of savoury fried snacks from India. Different types of vadas can be described variously as fritters, cutlets, doughnuts, or dumplings. This recipe is for a basic urad dal vada, a crispy, deep-fried snack that's perfect with chutney or sambar.

Ingredients - Serves 4

Let's Get Started

  1. Soak the urad dal in water for at least 2 hours.
  2. Drain the water and grind the dal to a smooth paste, adding very little water if necessary.
  3. Add the chopped green chillies, ginger, cumin seeds, black pepper, and salt to the dal paste and mix well.
  4. Heat oil in a deep frying pan.
  5. Wet your hands and take a small amount of the dal mixture. Shape it into a round disc and make a hole in the center.
  6. Gently drop the vada into the hot oil and fry until it turns golden brown.
  7. Remove the vada with a slotted spoon and drain on paper towels.
  8. Serve hot with chutney or sambar.
