Misal Pav
Misal Pav is a popular dish from Maharashtra, India. It consists of misal (a spicy curry usually made of sprouted moth beans) and pav (a type of Indian bread roll). The final dish is topped with potato-chiwda mix, "farsan" or "sev", onions, lemon and coriander (cilantro). It is usually served with bread or rolls toasted with butter and buttermilk or curd and papad.
Ingredients - Serves 4
- Fresh coriander - For garnish
- Lemon - 1, cut into wedges
- Farsan mix - 1 cup
- Pav bread - 8 pieces
- Curry leaves - A sprig
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Oil - 2 tablespoons
- Salt - To taste
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Misal masala - 2 tablespoons
- Ginger-garlic paste - 1 tablespoon
- Tomatoes - 2, finely chopped
- Onions - 2, finely chopped
- Sprouted moth beans - 1 cup
Let's Get Started
- Soak the moth beans overnight and allow them to sprout. Boil the sprouted beans until they are cooked.
- Heat oil in a pan, add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
- Add chopped onions and sauté until they turn golden brown. Add the ginger-garlic paste and sauté until the raw smell goes away.
- Add chopped tomatoes and cook until they are soft.
- Add the misal masala, red chili powder, turmeric powder, and salt. Mix well.
- Add the boiled sprouted beans to the pan and mix well. Add water as needed to adjust the consistency of the curry.
- Simmer the curry for 10-15 minutes.
- Toast the pav bread with some butter.
- Serve the misal in a bowl, topped with the farsan mix, chopped onions, and coriander. Serve the toasted pav and lemon wedges on the side.
