Spinach Curry
This flavorful spinach curry is made with fresh spinach, aromatic spices, and creamy coconut milk.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Oil - 2 tablespoons
- Salt - To taste
- Coconut milk - 1 cup
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Green chili - 1, finely chopped
- Tomatoes - 2 medium, chopped
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Spinach - 500 grams
Let's Get Started
- Heat oil in a pan over medium heat.
- Add the chopped onion and sauté until golden brown.
- Add minced garlic, grated ginger, and green chili. Sauté for another minute.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well.
- Add the spinach leaves and cook until they wilt down.
- Transfer the mixture to a blender and blend until smooth.
- Return the blended mixture to the pan and add coconut milk. Stir well.
- Season with salt and let the curry simmer for 5-7 minutes.
- Garnish with fresh cilantro and serve hot with rice or naan bread.
