Ingredients - Serves 4

  1. In a large pot, bring water to a boil. Add the flank steak and cook for 1 hour or until tender.
  2. Remove the cooked flank steak from the pot and let it cool. Once cooled, shred the beef into thin strips.
  3. In a bowl, combine the minced garlic, lime juice, orange juice, salt, and black pepper. Mix well.
  4. Marinate the shredded beef in the garlic and citrus mixture for at least 30 minutes.
  5. Heat olive oil in a large skillet over medium-high heat. Add the sliced onion and green bell pepper. Cook until softened and slightly caramelized.
  6. Add the marinated shredded beef to the skillet and cook until crispy and browned, about 5-7 minutes.
  7. Sprinkle chopped cilantro over the cooked beef and stir to combine.
  8. Serve the Vaca Frita hot with lime wedges on the side.
