  1. Soak the rice noodles in warm water for 30 minutes, then drain and set aside.
  2. In a large pot, add the pork ribs and water. Bring to a boil and cook until the pork is tender.
  3. In a mortar and pestle, pound the dried red chili, garlic, and shallots into a paste.
  4. Add the paste to the pot and stir well. Add the diced tomato, fish sauce, tamarind paste, sugar, and salt.
  5. Let the soup simmer for about an hour, until it has a rich flavor and the pork is very tender.
  6. Serve the noodles in bowls, ladle the soup over the top, and garnish with bean sprouts. Serve with lime wedges on the side.
