Khanom Chin Nam Ngiao
A traditional Thai dish, Khanom Chin Nam Ngiao is a spicy and tangy noodle soup with a rich, flavorful pork broth.
Ingredients - Serves 4
- Lime wedges - For serving
- Bean sprouts - For garnish
- Water - 1 liter
- Salt - To taste
- Sugar - 1 teaspoon
- Tamarind paste - 2 tablespoons
- Fish sauce - 3 tablespoons
- Tomato - 1 large, diced
- Shallots - 5 pieces
- Garlic - 5 cloves
- Dried red chili - 10 pieces
- Pork ribs - 500 grams
- Rice noodles - 200 grams
Let's Get Started
- Soak the rice noodles in warm water for 30 minutes, then drain and set aside.
- In a large pot, add the pork ribs and water. Bring to a boil and cook until the pork is tender.
- In a mortar and pestle, pound the dried red chili, garlic, and shallots into a paste.
- Add the paste to the pot and stir well. Add the diced tomato, fish sauce, tamarind paste, sugar, and salt.
- Let the soup simmer for about an hour, until it has a rich flavor and the pork is very tender.
- Serve the noodles in bowls, ladle the soup over the top, and garnish with bean sprouts. Serve with lime wedges on the side.
